From chopping the wood, to forming the loaves, to smelling the heavenly scent of freshly baked bread – we love each stage in the wood fired baking process. EmmyLou is our way of sharing this pleasure with you.

We are lucky to source our wood from fallen Oak trees from the baker’s hometown of Lebec, CA. We believe that burning this majestic wood makes all the difference:: the transformation of their matter into heat warms the walls of the oven and thus loves our loaves and treats into existence every week.

We use only the highest quality organic ingredients because we know it makes a difference. The flour is from the Central Milling Cooperative in Utah and we only leaven the loaves with our homegrown sourdough starter. Learn more about the process here.
